1 head cauliflower, florets
1½ tablespoons melted coconut oil
1½ tablespoons curry powder
¼ teaspoon salt
5 cups mixed greens
1 cup cooked lentils
1 cup red or green grapes, halved
4½ tablespoons green curry paste
2 tablespoons tahini
2 tablespoons lemon juice
1 tablespoon maple syrup
1 pinch salt
1 pinch black pepper
Water to thin
How to Prepare:
Preheat your oven to 400 degrees F. On a greased baking sheet, toss cauliflower with salt, curry powder, and oil.
Bake the cauliflower for 25 minutes in the oven.
Combine all the dressing ingredients in a small bowl.
In a salad bowl, toss in all the vegetables, roasted cauliflower, and dressing.
Mix them well then refrigerate to chill. Serve.
