Coconut Shrimp with Spicy Mayo

PREP: 10 MINUTES • COOK TIME: 6 MINUTES • TOTAL: 16 MINUTES • SERVES: 4

Ingredients

1pound large shrimp (about 2 dozen), peeled and deveined, tails on
Fine sea salt and ground black pepper
2 large eggs
1 tablespoon water
½ cup unsweetened coconut flakes
½ cup pork dust

SPICY MAYO:

½ cup mayonnaise
2 tablespoons beef or chicken broth
½ teaspoon hot sauce
½ teaspoon cayenne pepper

FOR SERVING (OPTIONAL):

Microgreens
Thinly sliced radishes

Directions:

1 Mise en place.

Spray the Breville Smart Air Fryer Oven basket with
avocado oil

Preheat the air fryer oven to 400°F. Season the shrimp well on
all sides with salt and pepper.

Crack the eggs into a shallow baking dish,
add the water and a pinch each of salt and pepper, and whisk to combine.

In another shallow baking dish, stir together the coconut flakes  until well combined.

Dip one shrimp in the eggs and let any excess
egg drip off, then dredge both sides of the shrimp in the coconut mixture.

Spray the shrimp with avocado oil and place it in the Breville Smart Air
Fryer Oven basket. Repeat with the remaining shrimp, leaving space
between them in the Breville Smart Air Fryer Oven basket.

2 Cooking.

Place the AirFryer Basket onto the Baking Pan. Put the
assembled pan into Rack Position 2. Set oven to AirFry at 400°F.

Cook the
shrimp in the Breville Smart Air Fryer Oven for 6 minutes, or until cooked
through and no longer translucent, flipping halfway through. While the
shrimp cook, make the spicy mayo: In a medium-sized bowl, stir together
all the spicy mayo ingredients until well combined.

Serve the shrimp on a
bed of microgreens and thinly sliced radishes, if desired.

Serve the spicy
mayo on the side for dipping
