Coconut Shrimp

PREP: 15 MINUTES • COOK TIME: 5 MINUTES • TOTAL: 20 MINUTES • SERVES: 4

Ingredients

1 (8-ounce) can crushed pineapple
½ cup sour cream
¼ cup pineapple preserves
2 egg whites
⅔ cup cornstarch
⅔ cup sweetened coconut
1 cup panko bread crumbs
1pound uncooked large shrimp, thawed if frozen, deveined and shelled
Olive oil for misting

Directions:

1 Mise en place

Drain the crushed pineapple well, reserving the juice. In a small bowl,
combine the pineapple, sour cream, and preserves, and mix well. Set aside.

In a shallow bowl, beat the egg whites with 2 tablespoons of the reserved
pineapple liquid.

Place the cornstarch on a plate. Combine the coconut and
bread crumbs on another plate. Dip the shrimp into the cornstarch, shake it
off, then dip into the egg white mixture and finally into the coconut
mixture

Place the shrimp in the Breville Smart Air Fryer Oven basket and
mist with oil.

2 Cooking

Place the AirFryer Basket onto the Baking Pan. Put the assembled pan into
Rack Position 2

Set oven to AirFry at 356°F.

Air-fry for 5 to 7 minutes or
until the shrimp are crisp and golden brown.
