French Style Potato Salad

2 pounds baby yellow potatoes, boiled, peeled, and diced

1 pinch salt and black pepper


1 tablespoon apple cider vinegar

1 cup green onion, diced

¼ cup fresh parsley, chopped


2½ tablespoons brown mustard

3 cloves garlic, minced

¼ teaspoon salt and black pepper

3 tablespoons red wine vinegar

1 tablespoon apple cider vinegar

3 tablespoons olive oil

¼ cup dill, chopped

How to Prepare:

Combine all the dressing ingredients in a salad bowl.
In a salad bowl, toss in all the vegetables, seasonings, and dressing.
Mix them well then refrigerate to chill. Serve.
