Ingredients:
Sweet potato:
1 large organic sweet potato, cubed
1 tablespoon avocado or coconut oil
1 pinch salt
Dressing:
¼ cup tahini
2 tablespoons lemon juice
1 tablespoon maple syrup
1 pinch salt
Water
Salad:
5 cups greens of choice
1 medium ripe avocado, chopped
2 tablespoons hemp seeds
How to Prepare:
Preheat your oven to 375 degrees.
On a greased baking sheet, toss sweet potato with salt and oil.
Bake the potatoes for 20 minutes in the oven, toss halfway through.
Combine all the dressing ingredients in a small bowl.
In a salad bowl, toss in all the vegetables, roasted potato, and dressing.
Mix them well then refrigerate to chill. Serve.
